Huila is Colombia's largest coffee-producing department, a mountainous corridor in the country's south known for exceptionally clean, balanced cups with bright red-fruit acidity and caramel sweetness. Its altitude range (1,300–2,000m) and volcanic soil make it the epicenter of Colombia's specialty boom — and the birthplace of the rare Pink Bourbon mutation.
