How much coffee do I use in a Vietnamese phin?
About 18 g (roughly 2 tablespoons) of medium-coarse coffee for a 6 oz phin, brewed at about 1:7.5 coffee to water by weight. Phin coffee is strong and concentrated by design.
What grind size is best for a phin filter?
Medium-coarse, a bit coarser than a paper-filter pour-over. Too fine and the water will not drip through. See the
grind size guide.
How long should a phin take to drip?
About 4 to 5 minutes after a 30-second bloom. If it finishes in under 3 minutes, grind finer or press the plate down a little more; if it takes over 6, grind coarser.
How much condensed milk goes in ca phe sua?
About 2 tablespoons (40 g) for a medium phin. Use less for a bitter-forward cup and more for the classic sweet Vietnamese style. Add it to the glass before brewing.
What water temperature should I use for a phin?
Just off the boil, around 95 C (203 F). Hot water pulls out the strong, chocolatey flavors that Vietnamese-style robusta blends are known for. See the
water temperature guide.
Which coffee is best for a phin?
Traditionally a dark-roasted robusta or robusta-arabica blend. Medium to dark roasts with chocolate and nutty notes also work well. See the
best phin filters.
