What to Look for in Specialty Espresso Beans
- Roast date matters most: Espresso amplifies staleness. Most blends perform best 7–21 days post-roast — after CO₂ degassing but before oils oxidize. Buy directly from the roaster and check the roast date.
- Buy whole bean: Espresso grind size is ultra-fine — pre-ground coffee goes stale in minutes at espresso fineness. Always grind fresh with a burr grinder immediately before pulling.
- Light ≠ sour: Light roast espresso is trending and can be exceptional (Onyx Geometry at 4.7★ is a light roast), but it requires more precise temperature and grind settings. If you're newer to espresso, start with a medium roast blend.
